Description
2016 showed a late vegetative cycle that began with slow budding due to the cold spring. Late flowering and good fruit set resulted in an optimal harvest. Veraison began in mid-August and continued until mid-September, which caused a certain delay in ripening. Harvest was characterised by a late ripening period, as well as by its prolonged duration. There were large temperature differences between day and night that helped to complete ripening process, resulting in an outstanding harvest in terms of phytosanitary conditions and high quality.
Vinification
Hand harvest, natural fermentation with indigenous yeasts. Inox tanks and open vats.
Aging
20-21 months in oak barrels of various ages and volumes.
