Parés Baltà has made a name for itself on our market thanks to its accessible bubblies of great purity. Working with the Xarel-lo grape variety in maceration for this cuvée, the estate offers a remarkably fragrant orange wine whose profile will appeal to both fans of the genre and anybody curious about the style.
"Orange" wine is made by leaving the skins of grapes to ferment with the juice instead of removing them - white wine made like a red.
Taste
Tension and structure that leaves no one indifferent. The tannins of the skins and their evolution are the protagonists.

Grilled crustaceans, grilled meats, and parmesan risotto. A gastronomic wine.
Vinification
Natural wine, no sulfites added, may have some haze and sediments.
Xarel·lo grapes and skins, and Gewürztraminer skins. To the Xarel·lo must 10% of skins of Gewürztraminer are added once pressed. Natural alcoholic fermentation with wild yeasts in stainless steel tank. Punch down of the grape skins twice a day during the maceration process. Skins stay in contact for 1 month and the wine acquires an amber colour. Very light filtration.
