Taste
The palate is full and greedy with silky tannins, black fruit aromas ; forest fruits, graphite and blond tobacco notes. The finish is warm and enhanced by the tension characteristic of granitic soils.

Red meats, game birds or unpasteurized milk cheeses
Vinification
Hand-picked grapes, strictly selected according to origin and maturity. All grapes are destemmed. Fermentation in inox or concrete vats ; vatting for 15-18 days with soft fruit extraction.
Aging
Partly aged in tank to preserve the fruit’s purity and partly in French oak barrels to mellow the tannic structure.
