Cavit Pinot Grigio

Cavit is a company deeply rooted in Trentino, a small region in the north-east of Italy where the vine, olive tree and Mediterranean-type vegetation live side by side with spruces and larches of the Alpine flora. This is a land of ancient tradition and culture, where villages, castles and cultivated terraces blend with the majestic Alpine landscapes.

This co-operative composed of small wineries represents 70% of Trentino's wine production. Cavit harvests, evaluates and selects its raw materials from the best produce of the cooperative member cellars, which undergo strict controls at every stage.

Cavit was one of the first Italian wineries to obtain quality certification in Italy, certified ISO 9002:1994 and ISO 9001:2000.

Pinot Grigio

The principal source of grapes for this wine is Trentino's Adige River Valley. This area is ideal for vineyards due to its exceptional soil and climatic conditions. It is also recognized for the spectacular natural beauty of the Dolomite Alps.

Grapes are carefully selected and then vinified utilizing the most advanced technology. Cold fermentation preserves the natural fruit and inimitable freshness of the wine.

Cavit Pinot Noir

Pinot Noir

Pinot Noir grapes are grown in hilly areas throughout the province of Trento, Grave del Piave in the Veneto region and Grave del Friuli. Grapes are picked at peak maturity in the second and third weeks of September. Fermentation takes place over 6-8 days under controlled temperatures of 30°C in small stainless steel vats.

The wine then is placed in larger oak barrels where it rests on its lees until malolactic fermentation has occurred. It is further aged in large sized receptacles to guarantee a complete refining at a temperature of 13 to 15°C.

Tasting- This silky smooth red is medium-bodied, with well-defined fruit redolent of red berries and cherries and soft, supple tannins. A youthful, vibrant purple. Delicate and alluring aromas of black cherry.
Serving- Enjoy with grilled or roasted red meats, poultry, flavorful vegetarian entrees, risottos. Also enjoyable with flavorful fish entrees, such as salmon, tuna, and swordfish. Serve at room temperature.
